Semolina muffins with kefir. Incredibly delicious kefir muffins with semolina How to bake a muffin with semolina

At the same time, the baking turns out to be so delightfully wonderful that I am writing a recipe, and I myself think that I urgently need to run to the kitchen and repeat, repeat, over and over again, because it is actually very tasty.

In general, cook - you won't regret it! I added some raspberries to the dough - they flopped down, but the overall impression of the baking did not spoil in any way. If desired, you can add zest, nuts, dried fruits, candied fruits and whatever you want. But raspberries, keep in mind, in muffins on kefir"sounds" incredibly cool.

Hello!
Not so long ago, such pastries as muffins and cupcakes became popular in our country. That is, in fact, small muffins with or without filling. And somehow, imperceptibly, our manna, sour cream and large rhombus-shaped muffins faded into the background. But it all depends on the form of baking. For example, muffins and cupcakes are served in portions in small paper cups; by the way, they are also baked in them right away. So why not try making a manna using the same baking tins. After all, in essence, mannik is the most easy option a cupcake that is suitable for children and the elderly.

To prepare manna, we need:

  • - 160 gr. semolina;
  • - 130 gr. wheat flour;
  • 180 g granulated sugar;
  • 350 gr. kefir;
  • 0.5 tsp soda;
  • 2 chicken eggs;
  • 40 gr. vegetable oil.

Pour kefir into a large container

Add a glass of semolina and granulated sugar to it.

We send two chicken eggs to a bowl. Mix everything well.

Add sifted flour in small portions. If it is necessary to make the manna completely dietary, we remove the flour from the recipe, and put the semolina twice as much.

At the end, add half a teaspoon of baking soda or a teaspoon of baking powder. There is no need to extinguish soda, since a fermented milk product is present in the dough.

You can take vegetable oil or pre-melted butter. You will need 2 tablespoons. We send the butter into the dough and knead well.
At this point, we suspend the work for about 1 hour. It is necessary to let the semolina swell, and the soda with kefir to react.
Returning to work, first of all, turn on the oven, let it heat up to 150 degrees.

Ready dough must be laid out in tins. In this case, a metal muffin pan is used. You can take silicone molds or, as mentioned earlier, special corrugated paper molds.

Metallic formula is best lubricated from the inside. butter and sprinkle with semolina so that the cupcakes do not stick. With silicone and paper molds, this problem does not arise.

We spread the dough with a spoon, not reaching the edges, approximately 0.5 cm each. Unlike flat muffins, the dough at the manna is porous and rises very well.

You can add any available berries by pressing them into the dough. Or take raisins, nuts, dried fruits, chocolate pieces, and more.
