Such cabbage rolls were certainly not invented by a lazy person. If you look at it, then it takes about the same amount of time to prepare them as on classic version... The only thing that can not but rejoice is that you do not need to remove the scalding cabbage leaves from the head and carefully wrap the filling in them. Such "cutlets" come out more tender, cabbage is always stewed until soft due to fine slicing. In general, it is definitely worth cooking lazy cabbage rolls with rice and minced meat in a saucepan. The recipe with a photo is described step by step, but if you have any questions, do not hesitate to ask them.

Features of the dish

  • The "lazy" version of stuffed cabbage is usually prepared with two different ways: in the form of portioned cutlets (meatballs) or in the form of a kind of stew of vegetables and minced meat. The ingredients and their proportions remain roughly the same. Let's consider the first option step by step in the recipe. The second I described when I was preparing this dish in a slow cooker. The essence is simple: finely chop all products, mix with tomato, sour cream, spices and simmer until tender.
  • For stewing, it is advisable to use a saucepan (roaster) with a thick bottom. Such dishes are less likely to burn.
  • Before stewing, cabbage rolls are breaded and fried. This will allow them to keep their shape during subsequent heat treatment.
  • If desired, add sour cream or heavy cream to the tomato sauce.

Foods needed for 6-8 servings:

minced meat or poultry - 600 g; white cabbage - 800 g;
carrots - 2 pcs. (about 300 g); onions - 2-3 pcs. (300-400 g);
sweet pepper (optional) - 100 g; rice groats(long) - 250 g (incomplete glass with a capacity of 250 cc);
sunflower deodorized oil - about 80 ml; tomato paste / mashed tomato pulp - 2 tbsp. l. / 200 g;
sour cream (optional) - 2-3 tbsp. l .; drinking water - 200 ml;
wheat flour - 2-3 tbsp. l. (for breading); salt - 1 tsp (taste);
sugar - a pinch (if necessary) garlic - 1-2 cloves
greens (parsley, dill) - 5-6 branches crushed pepper (mixture) - a pinch.

How to cook lazy but very appetizing stuffed cabbage rolls in a saucepan (recipe with step by step photos):

Boil rice until half cooked in salted water. Long-grain steamed groats are better for stuffed cabbage. It holds its shape even after roasting and stewing. Polished round rice in a bowl is used for preparing cereals, first courses and baking toppings. Rinse under the tap. Stir the rice with your hands and drain the water as it becomes cloudy. As soon as the water stops being cloudy, pour the cereal into a saucepan. Pour 1 to 1 volumes with water. Bring to a boil, reduce heat to medium. Cover with a lid. Cook until all the liquid has boiled away - about 12-15 minutes.

Process other foods at the same time as cooking the rice. Chop the cabbage finely. It is advisable to use not very young, but also not coarse. You can also use a grater to chop the cabbage (if that's more convenient). Grate the carrots coarsely. Cut the onion into large cubes as standard. Set aside half of the carrots and onions for the sauce. The rest - use for stuffed cabbage. Place the shredded vegetables in a large bowl. Send boiled rice there.

Minced meat is an irreplaceable ingredient in traditional stuffed cabbage - classic or lazy. To make the dish juicy, use medium-fat meat - pork with beef, chicken (fillet of legs), turkey, etc. Twist the meat twice to make the minced meat more tender. When doing this, use a grid with fine holes a second time. Add minced meat to vegetables and rice. Wash greens, chop finely. Chop the garlic (squeeze through a press). Crush 8-10 peppercorns (preferably different types). Pour the spices into a bowl.

Stir the base of cabbage rolls first with a spoon, and then with your hands. Stir until the mixture is viscous.

Blind the oblong or rounded stuffed cabbage rolls into cutlets. Dip in flour. Shake off any remaining flour so that only a thin layer remains. Otherwise, it will crumble into oil and burn.

Fry each side of the workpieces one by one in hot oil. Cook over medium-high heat for 2-3 minutes, until golden brown. Place a few cabbage leaves on the bottom of a heavy-bottomed saucepan so that the cabbage rolls do not burn when stewing. Fold the fried cabbage rolls on top.

Fry the set onions with carrots in the remaining fat (add a little if necessary) until soft. Add tomato paste. Instead, you can take fresh mashed tomatoes, thick fruit drink, etc. Add sour cream or a little heavy cream... To make the gravy thicker, add a spoonful of flour. Stir. Pour in a glass of hot water. Stir. Season with salt, pepper and taste with your favorite spices. If the pasta is sour, add a little sugar to the gravy. Wait for it to boil, remove from heat.

Pour the prepared sauce into a saucepan with cabbage rolls. If it is not enough, add hot boiled water so that the liquid reaches the level of "cutlets".

Place on the stove. Once the gravy has boiled, reduce heat to low. Cover the pot with a lid, leaving a hole for the steam to escape. Simmer for 40-60 minutes until tender.

Stuffed cabbage rolls have firmly established themselves in the menu of Russian families. The dish appeared a long time ago. Many believe that the first cabbage rolls (classic) were cooked in ancient Turkey (in the fourth century BC). Since then, minced meat wrapped in leaves has gained immense popularity among residents of many countries.
Sarma, domlyama, Ukrainian darlings and Russian cabbage rolls - they are all “relatives”.

In addition to the well-known cooking method, there is another one that will allow housewives to save time and treat relatives with a delicious hearty dinner. These are lazy cabbage rolls in a pan, so named because they are easier, faster to cook, and you don't need any special skills.

Ingredients:

Minced meat (beef or pork) - 700 gr.
Onions - 1 pc. medium size
Cabbage (preferably with delicate leaves - for example, early varieties) - ½ part of a small head of cabbage
Carrots, grated on a not very fine grater - 1 pc.
Rice - ½ part of a glass
Tomato juice - 2-3 cups
Vegetable oil - 3 tbsp. spoons for roasting vegetables
Herbs and spices to taste.

Cooking method:

At the beginning of cooking lazy cabbage rolls in a saucepan, grated carrots and chopped onion fry until half cooked in a pan with vegetable oil, while slightly salting.

Boil the rice in a large amount of slightly salted water, then drain and rinse a couple of times.

The cabbage must be cut into small cubes and either boiled in boiling water for a couple of minutes, and then drained, or put in the microwave for 5 minutes, after which it becomes soft.

In a large bowl, mix the minced meat (if it is frozen, it must first be defrosted at room temperature until soft), fried onions and carrots, stewed cabbage and boiled rice. Salt to taste, if desired, you can add pepper or spices ( Provencal herbs for example, or dried basil to add a subtle flavor to the dish).

From the resulting mixture, we form small neat balls (these are lazy cabbage rolls), dense enough so that they do not fall apart when cooking in a saucepan.

We put the formed lazy cabbage rolls in a saucepan with a thick bottom, or in a deep frying pan, then pour tomato juice, cover with a lid and simmer over low heat for about thirty-five minutes.

You can also cook similar lazy stuffed cabbage rolls in a slow cooker, putting the balls in a bowl, filling with juice and setting the desired mode. Serve ready-made lazy cabbage rolls, which you cooked in a saucepan, serve hot in portions, sprinkle with finely chopped fresh herbs or decorate with parsley sprigs. Additionally, you can serve sour cream or mayonnaise.

Bon Appetit to you and your family!

Cabbage rolls - popular dish Eastern European, Middle Eastern and Asian cuisines. In Germany they are called cabbage sausages, in Spain - stuffed cabbage, in France - cabbage cigars. The Russian name "cabbage rolls" appeared in the middle of the 19th century. Then, French roast pigeons were in vogue, which transformed into "false pigeons", that is, a simple chopped meat in a cabbage leaf. Another version says that the name came from Serbia, where the word "cabbage" means "dumpling". It turns out that cabbage rolls are not only meat in cabbage. Cabbage rolls are called a meat dish or minced vegetables wrapped in cabbage, grape leaves or horseradish leaves, and rice, buckwheat or barley is used as an additive. But that's not all. Stuffed cabbage rolls are lazy (yes, this is for those who like to eat deliciously, but are lazy). This is a way to quickly and easily prepare stuffed cabbage: instead of wrapping the filling in cabbage leaf, this same cabbage is simply added to the minced meat. And there is no need to split the forks into leaves, process them and wrap them with filling - a complete saving of time. It turns out cabbage and meat cutlets that can be fried, boiled, baked, or even cooked in a slow cooker. Lazy cabbage rolls taste no worse than traditional ones. How to cook lazy cabbage rolls in the oven, a recipe with a photo step by step

1. Cut the onion, the smaller the better. You can even grind it with a grater. And so as not to cry when slicing, soak a knife or grater in cold water.

2. Cut the cabbage finely too. The less, the better, because cabbage rolls formed from minced meat with cabbage should easily stick together and keep their shape.

3. Move the cabbage to a separate bowl.

4. Pour boiling water over the cabbage, cover with a plate and let it simmer for 5-10 minutes. So the bitterness will go away from the cabbage and it will become softer.

5. How to properly cook rice for lazy cabbage rolls? We wash it until the water becomes clear. Usually the groats are cleaned in 5 washes. Put the rice in a saucepan and fill it with water in a 1: 2 ratio. Salt a little, but it is better to do this at the time of boiling, since cold salt water heats up more slowly.

6. When the rice has boiled, immediately cover the pan with a lid, turn off the heat and leave the rice to steam for 15 minutes. Do not stir the cereals so as not to get porridge. Rice should be half cooked. Why do we take semi-cooked rice? If you use raw cereals, then during the cooking process it will absorb all the meat juice, from which the stuffed cabbage will turn out to be dry. Conversely, cooked rice will not absorb moisture, meat balls will turn out to be loose, will fall apart.

7. Meanwhile, the cabbage has become soft. We drain the water through a colander. You can additionally squeeze the cabbage with your hands.

8. The rice is worn out. Remove the pan from the stove, cool the rice a little.

9. Put onion, cabbage, minced meat and rice into a bowl. The onion will make the cabbage rolls juicier. It is better to take the meat fatter, so the stuffed cabbage will hold its shape more tightly. If you don't like beef and pork, try making stuffed cabbage rolls with minced chicken. By the way, the amount of rice can be increased to taste, the proportion of meat and rice is 1: 3.

10. Salt and pepper.

11. Mix, you can try. If the minced meat is dry, you can add one egg to it. This is the consistency of minced meat for stuffed cabbage rolls (I have no eggs).

12. We begin to form lazy cabbage rolls. We take a tablespoon with a slide of minced meat with wet hands. We wet our hands every time to make it easier to roll the patties.

13. Roll up the oblong cabbage roll. You can postpone the baking of cabbage rolls for a while by placing them in the freezer. Only after removing from the freezer, be sure to let them thaw until room temperature and then we cook.

14. Well roll lazy cabbage rolls in flour, shake off excess.

15. Put in heated vegetable oil (3-5 tablespoons) and begin to fry over medium-high heat until an appetizing golden crust is formed.

16. Turn over, fry on the other side until golden brown... Inside the cabbage rolls remain raw, they must be baked until fully cooked.

17. Put in a baking dish in one layer.

18. My number of stuffed cabbage rolls out into 2 forms.

19. Tomato sauce- a traditional addition to lazy cabbage rolls. A simple recipe for stuffed cabbage sauce: mix sour cream, salt, pepper, tomato paste. If the pasta is too sour, you can add a little sugar.

20. Fill in warm or hot boiled water so that the sour cream dissolves more easily. A little trick: the water in which the cabbage was steamed will do. Salt the sauce a little too.

21. Stir and taste. If it's too bland, add more salt, or you can add your favorite spices. Coriander, paprika, rosemary, and basil work well. Spices can be mixed at home, or you can purchase a ready-made seasoning. It is called that - seasoning for cabbage rolls. Although, without unnecessary seasonings, with one black pepper and salt, lazy cabbage rolls taste amazing.

22. Pour most of the stuffed cabbage rolls, 5-6 tbsp. leave. Cover the cutlets with sauce halfway, so the stuffed cabbage will remain intact. If you pour them to the top, they may lose their shape.

23. We send lazy cabbage rolls to the oven and bake for 40 minutes at 180 degrees. It turns out a beautiful fried top.

24. Chop herbs and garlic.

25. We take out almost finished cabbage rolls, sprinkle with herbs and garlic, pour over the remaining mixture, and return to the oven for 3-5 minutes. The aromas come out, remain bright, do not interrupt.

26. Lazy pigeons are a high-calorie dish, filling in itself. And since cabbage rolls are prepared with rice, cabbage and minced meat, you can do without a side dish. But if you want more hearty lunch or dinner - serve lazy meat duckies with mouth-watering gravy you can go with buckwheat, rice or mashed potatoes... Will be irreplaceable and fresh vegetables... And as an additive, we use sour cream, which can be seasoned with grated garlic.
