Pancakes on kefir with boiling water - step by step recipes thin pancakes. updated: November 11, 2019 by the author: Pavel Subbotin

Most people just love pancakes, especially since you can wrap various fillings in them. Today we will look at several recipes for pancakes with kefir with boiling water.

Ingredients:

  • Kefir - 0.5 l (fat content is more than 2.5%, this is mandatory);
  • Boiling water - 0.25 l;
  • Eggs - 3 pieces (if large, then two are enough);
  • Flour - 0.5 kg;
  • Sugar - 4 tsp;
  • Vegetable oil - 4 tbsp. spoons;
  • Soda - ½ tsp;
  • Salt - 2 pinches.

Preparation:

  1. Use a large bowl to knead the dough in and beat the eggs into it. Beat them well with a fork or whisk. If possible, use a mixer, this will greatly speed up the process.
  2. Add sugar to the eggs and then salt. Mix everything again.
  3. Pour kefir into a small saucepan and put it on low heat. It will be enough for a few minutes for the kefir to heat up.
  4. Add warm (not hot) kefir to the eggs. Whisk the dough until homogeneous mass.
  5. Sift flour and add it to the dough. Beat everything thoroughly with a mixer. It is better to add flour in small portions so that no lumps form. For example, first add only half a glass of flour to the dough, stir everything, then another half a glass, and so on until you throw all 2 glasses. The dough should be smooth, so don't be lazy. Otherwise, thin pancakes will not work, this is one of the most difficult stages.
  6. The mass will be thick (like for pancakes), so add boiled water to the dough. First you need to pour boiling water into a glass and add soda to it, it should completely dissolve in the water.
  7. Introduce water into the dough in a thin stream, stirring constantly.
  8. Pour some vegetable oil into the dough (about 4 tablespoons) and beat again. Send the dough to infuse for 30 minutes. Let it rest at room temperature.
  9. When the dough is done, put the pan on the gas. Be sure to warm it up well, otherwise the pancakes will be undercooked and without holes. Many housewives make this mistake, and the first pancakes have to be thrown away.
  10. Pour some vegetable oil into the pan, wait for it to heat up, and only then pour in the dough.
  11. Take a ladle and pour the dough into it, there should be a little of it - about half a ladle.
  12. Pour the dough into the middle of the skillet and use a rolling motion to spread the dough over the entire surface.
  13. When a pancake on one side acquired golden crust- it can be turned over. Choose the degree of roasting yourself, as some like crunchy pancakes, while others like soft pancakes.
  14. Openwork pancakes on kefir with boiling water are ready. Put the pancakes on a plate and grease with butter or just each pancake, before use, dip in the sweet filling.

  • Butter - 50 g;
  • Kefir - 0.25 l;
  • Salt - 1 pinch;
  • Cocoa - 3-4 tbsp. spoons (can be replaced with slab chocolate);
  • Boiled water - 0.5 cups;
  • Egg - 2 pieces;
  • Sugar - 2-3 tbsp. spoons;
  • Baking powder - 1 tbsp. a spoon;
  • Flour - 0.5 kg.

  3. Add cold milk to the mass and beat everything again with a mixer.
  4. Pour the warmed kefir into a large bowl, mix it with the eggs.
  5. Add a little salt to the kefir and beat everything again. The salt in the recipe is essential as it opens up the sugar.
  6. Pour the chocolate mass into the dough.
  7. Sift the flour and add it to the dough, stirring constantly. Add baking powder to the dough and beat gently again so that the dough does not have lumps.
  8. Leave the finished dough to rest for at least 20 minutes.
  9. Beat the dough thoroughly again before cooking.
  10. Grease a hot skillet with oil. It is enough to do this only once and you do not have to grease the pan before the next pancakes.
  11. Pour the dough into a very hot skillet and be careful not to burn the pancakes, as the dough is very thin.
  12. The pancake should be baked on each side for about a minute.
  13. Ready-made thin pancakes on kefir with boiling water should be served with sour cream or cream.

Chocolate pancakes can be much nicer. If you draw patterns on them. To do this, make the dough without adding cocoa and then pour about a third finished dough and add 3 tablespoons of cocoa to it.

Then pour into the pan regular dough and quickly pick up the chocolate mass with a spoon and draw circles or stripes. Or you can write the names of your family members or guests on each piece. However, imagination will already turn on here, and the pancakes will turn out to be very original and colorful.

Last time I showed you how to cook, but today I present a recipe for thin pancakes on kefir with boiling water. This is another kind of mouth-watering dessert treat that is also worth getting to know. What is its peculiarity?

First, kefir. It contains carbon dioxide, which releases bubbles. These bubbles, during baking, give holes to the products. And if you also add soda, then these bubbles will be even more.

Secondly, boiling water is another ingredient that makes them just lacy. If boiling water is added to the dough, then it begins to foam well, becomes voluminous, like with yeast, and also quickly gets rid of flour lumps.

By the way, such pancakes can be eaten as independent dish, for example, with tea or coffee, with condensed milk, jam, or used for stuffing various fillings.

According to this recipe, they always turn out to be excellent: airy, well baked and not torn. Thanks to kefir and soda, the dough foams perfectly, and there are a lot of bubbles. These bubbles subsequently give these cherished holes, even without the use of yeast.

Ingredients:

  • 350 ml. kefir;
  • 350 ml. boiling water;
  • 2 eggs;
  • 2 tbsp Sahara;
  • 0.5 tsp soda;
  • 0.5 tsp salt;
  • 250 g flour;
  • 3 tbsp vegetable oil.

Preparation:

1. Pour kefir into a bowl. It should be warm (preheat a little on the stove in advance) or, as a last resort, room temperature... Add the baking soda, stir and let the mixture sit for a few minutes.

The soda is "extinguished" with kefir and the dough will become fluffy.

Then put eggs, salt and sugar in the same place. Stir well with a whisk.

2. Now add flour and stir so that there are no lumps. Then pour in boiling water and beat again quickly until smooth. It remains to add vegetable oil and stir gently. Finally, our dough is ready for baking.

3. First of all, heat the pan well. If you heat it badly, then the holes will not appear. Without greasing the pan, pour in a portion of the dough, evenly covering its surface. Grill over high heat. At the time of frying, you will see how those holes appear.

4. The edges are golden brown and then gently turn the cake over to the other side and fry again until golden brown. Remember that you do not need to add oil when baking.

5. And now, our pancakes are ready. They turned out to be airy and look how they have a beautiful golden color. In addition, the taste of kefir and soda is not felt in them at all, which is very good!

Lace pancakes with boiling water for 0.5 liters of kefir

Moving on and next in line next recipe... I got it from a friend, I tried to bake it and really liked the result. Just look at the structure of such pancakes. Lace! They beckon to try the hot heat! According to this recipe, kefir will need only 0.5 liters.

Ingredients:

  • 0.5 liters of kefir;
  • 1 cup boiling water;
  • 2 cups of flour;
  • 2 eggs;
  • sugar to taste;
  • 2 tbsp vegetable oil;
  • 1 tsp soda;
  • salt to taste.

Preparation:

1. In a large, handy bowl, whisk a couple of eggs along with salt and sugar. Add kefir there, and then sifted flour in small portions.

2. In a glass of boiling water, extinguish a teaspoon of soda and add the resulting liquid into the dough in a thin stream. After that, pour in a couple of tablespoons of vegetable oil. The mass should become more liquid, as well as homogeneous and without lumps.

3. It remains only to fry. By the way, I advise you to pour the dough into the ladle by about half, so the products will turn out to be thin. Also, do not forget to grease the pan with oil while baking.

If your first pancake is lumpy, then the frying pan was not heated well.

4. I noticed that if each cake is greased with butter, then they become even softer and as if creamy. I also sometimes fill them with cottage cheese, pour over sour cream and bake them in the oven. It turns out very tasty!

3. In addition to vegetable oil, grease the pan with a piece of bacon, as in the old days, by hooking it onto a fork. It is believed that its fat is more evenly distributed over its surface.

Thin openwork pancakes with kefir and milk - a simple recipe

  • a pinch of salt.

The amount of flour added may depend on the moisture content and the size of the egg.

Stir constantly with a whisk, add baking soda and immediately pour in boiling water.

2. It is better to grease the frying pan with refined vegetable oil so that the baked goods do not have foreign odors and tastes. In addition to a piece of bacon, I also use an onion cut in half. I dip it in a dish with butter and distribute it over the bottom of the pan.

3. One has only to put the finished products in a pile, lightly pour over condensed milk and delicious dessert ready!

Hello my dear subscribers! Maslenitsa is not far off - which means it's time to think about holiday menu for a whole week. Of course, pancakes are traditionally the main treat of Maslenitsa celebrations. Delicious and nutritious, they can be either with sweet fillings, or with meat or fish. Everyone is familiar with making regular dough using milk. And today I will tell you about pancakes on kefir with boiling water. Openwork in a hole, thin - not only delicious, but also a feast for the eyes!

The peculiarity of the unusual openwork texture is the use of hot, freshly boiled water. The dough is "brewed", getting more airy and loosened. That is why holes appear during baking, and the taste is light, melting right in the mouth.

I remember that as a child, this delicacy prepared by my mother was always a holiday for me. It doesn't matter if she cooked for Shrovetide or on an ordinary day. It was even a pity to eat such sweets. However, taste prevailed over beauty and I was eating it by both cheeks 🙂

Therefore, I adopted the classic recipe for this wonderful treat from my mother. And only then I began to experiment with its various variations. I cooked on sour kefir,. Even when I was on a diet,. This is how I found my favorite methods of making dough. And once a friend shared with me her unusual way of baking. Want to know how? Read on about this and much more 😉

I will share the verified classic recipe our family. Cooking is very simple, everyone succeeds in baking such a delicacy the first time, since they turn over well and do not stick to the pan. The dish goes well with a variety of sweet or savory fillings.

Ingredients:

  • 500 ml of kefir;
  • 250 ml boiling water;
  • 2 eggs;
  • 2 cups flour (320 g);
  • 30 g sunflower oil;
  • 25-50 g sugar (to taste);
  • 0.5 tsp salt;
  • 0.5 tsp soda.

Step-by-step cooking recipe:

1. Beat eggs into kefir at room temperature, salt and add sugar. Stir well.

2. Add the baking soda to the flour, and then sift it through a sieve into the ingredients you mixed earlier. Usually this batter it is easy to mix without lumps.

3. Add boiling water and sunflower oil. Stir quickly.

4. Preheat a skillet, brush it with oil and bake over high heat. Pancakes are thin with holes, delicious and ruddy. They can be served with butter, condensed milk, jam, or with other fillings to taste.

Have you tried adding cottage cheese to the dough? If not, I recommend it.

The dough can also be kneaded with sour kefir. This will add to the finished light dish sourness, which many people like. In this case, a great combination with sweet fillings.

Recipe for lace pancakes on kefir with boiling water

According to this cooking option, the delicacy will turn out to be not only tasty, but also beautiful. This is the secret that my friend surprised me with. On her table, I saw real works of art baked from ruddy dough: in the shape of hearts, stars, round or square. Whole words were even written with the test.

The baking method is very simple: you can paint with a sauce bottle, squeeze the dough out of it and shape various patterns in the baking pan.

You will need:

  • 3 eggs;
  • 250 g flour;
  • 1 glass of kefir;
  • 2 tsp Sahara;
  • 0.5 tsp salt;
  • 120 g hot water (boiling water);
  • 50 g sunflower oil;
  • vanillin.

How to cook:

1. Break eggs into a dough bowl and add salt and sugar. Stir with a whisk, add flour. It is necessary to mix the ingredients slightly, but a homogeneous mixture at this stage will not work, because so far no liquid components have been added.

2. Pour kefir, stir. Then add vanillin and butter, pour in water and mix thoroughly.

Make sure not to leave lumps, even small ones. Otherwise, it will prevent the dough from being evenly distributed in the pan in the form of a beautiful lace.

3. Take a plastic bottle for sauces, pour in the batter and close the lid tightly. Or poke a few holes in the lid of a regular 0.5L plastic bottle.

4. Let's start baking. Heat the skillet and grease it with oil, then start drawing lace patterns on it by squeezing the batter out of the bottle. The pan should not be too hot, otherwise the first portions of the dough will burn while you finish painting the next ones. Use medium to low heat when baking.

Connect the children to the process. It will give them a lot of pleasure. After all, they will be able to create various patterns in a frying pan, following their own imagination. And then they will give you their creation 🙂

  6. It's time to add flour. Our mixture is hot due to the added boiling water. Therefore, the flour will dissolve perfectly without forming lumps. Sift it through a sieve, mix with a whisk. My flour dissolved just perfectly, the dough turned out to be homogeneous.
  7. Mix soda with the last portion of flour, add to the dough and stir. If the proportions are correct, you will get a batter, as it should be. Don't worry, everything will bake great.
  8. Step three - add vegetable oil. This trick will allow you not to constantly grease the pan with oil.
  9. We leave it for 10 minutes to “think”, during this time the ingredients “endure - fall in love” with each other.
  10. Step four - baking. We take a special pancake pan with a flat bottom. Or an ordinary frying pan, but with a thick bottom. We warm it up well - this is another secret. Heat up badly, spoil half of the dough.
  11. For the first time, grease the bottom of the pan with oil a little with a silicone brush. All subsequent times, the butter that we poured into the dough will be enough for us.
  12. We collect a little dough with a large spoon or ladle, pour it into the pan and quickly rotate it. Chic openwork holes instantly appear along the bottom. There is one trick here - you need to pour in a very thin layer, then there will be a lot of holes. If you pour it in a thick layer, there will be much less of them. So learn to pour a thin layer into the skillet.
  13. Make the fire on the stove higher than average. The first side is baked instantly. Lift the edge with a spatula - if it is rosy and lags well behind, then you need to turn it over. How you do it is your choice. Some craftswomen toss and flip in the air. Some turn them over with their hands, some with a spatula.
  14. Roll the finished goodies into corners or just stack them on a plate. It is not necessary to grease with butter or jam, all the same, the filling will flow out through the holes. This is not a recipe to stuff or grease on the inside. This is an option for lovers of the recipe for openwork custard pancakes on thin kefir with holes.
  15. This amount of food is enough to feed two or three people. For 1 liter of kefir, quadruple the amount of products.

  • The main mistake is not to pour boiling water right away, pour it in a thin stream.
  • Do not let the batter bother you, it will turn out unambiguously and much more liquid than for pancakes.
  • Stir it with a ladle each time before baking, so the flour will not settle to the bottom.
  • A poorly heated skillet is the main reason for pancakes to burst. Heat it over high heat, then reduce it by half.
  • A thinly poured layer along the bottom of the pan is the key to the appearance of openwork.
