Pour into a quarter cup of batter, spread evenly. Roast for 1-2 minutes, then turn over and cook until browned on the other side, another minute.

Buckwheat flour option

  • 1.25 cups buckwheat flour;
  • 1/4 tsp xanthan gum;
  • 1 l. Art. white sugar;
  • 1/4 tsp salt;
  • 2 eggs;
  • 1.5 l. Art. melted unsalted butter;
  • 1.25 cups of milk.

Cooking buckwheat pancakes

In a large bowl, stir together the buckwheat flour, xanthan gum, sugar, and salt. Add eggs, melted butter and half a glass of milk. Beat well until you have a smooth, thick batter. Add the remaining milk gradually, whisking constantly. If necessary (if there are lumps of flour) pass the dough through a sieve.

Preheat a non-stick skillet, once cool, lightly brush with oil. Add half a cup of batter and swirl the pan in your hands to distribute it evenly.

Cook over low heat for one minute, or until the pancake stops sticking to the pan and looks golden brown underneath. Turn the product over and cook for another 30 seconds - 1 minute, then place on a plate to cool. Repeat this with the rest of the batter.

Option on kefir

These are dietary pancakes without wheat flour. They are good for those who have recently been diagnosed with gluten intolerance and therefore have an irritated gut. The dough contains kefir, which is a natural probiotic that can restore the balance of the digestive system. If you want to make the pancakes taste interesting, replace it with "live" yogurt with any fruit supplement... In addition, you can freeze these pancakes and then just reheat. So, you need the following:

  • 2 cups Gluten Free All-Purpose Baking Mix
  • a quarter glass of sugar;
  • half a glass of milk or water;
  • 2 eggs, lightly beaten;
  • 2 glasses of "live" kefir or yogurt;
  • 0.5 tsp salt.

  • 2 large eggs;
  • a glass of milk;
  • half a glass of water;
  • 2 p. Art. unsalted butter, melted;
  • 1/4 tsp salt;
  • 1.25 cups gluten-free oat flour;
  • 1/4 tsp xanthan gum (not needed if your flour already contains xanthan);
  • half a glass of sugar.

Cooking oat pancakes

Combine eggs, milk, water and melted butter in a blender until smooth. Add remaining ingredients, stir several times with a spoon, then beat on low speed until smooth.

Heat a large skillet over moderate heat. Pour about a quarter of a glass of dough on it in the center and spread over the entire surface. Fry until the pancake is almost cooked and just a little damp on top. Turn it over gently and cook the other side. When finished, place the item on a dish and repeat this process with the remaining batter...
