Tbilisi salad classic recipe

A bright, beautiful and easy-to-prepare Tbilisi salad will decorate any festive table. The combination of ingredients in the salad is wonderful and it is not advisable to replace or exclude any. The only exception for myself I made by removing the red hot pepper from the salad, although it could have been put at least a little, but this is a matter of taste.

Classic Tbilisi salad recipe

Tbilisi salad ingredients:


Red beans 300 gr

Boiled beef 300 gr

Bell pepper 1-2 pcs

Walnuts 50-70 gr

Onion (preferably red) 1 pc

Garlic 2-3 prongs

Red hot pepper - to taste

Vinegar - wine, apple or grape

1. It is advisable to take red onions for salad, it has a softer taste. We cut the onion into quarter rings.
2. Prepare the onion marinade. Pour 300 ml of water into a bowl, put a teaspoon of sugar and add a tablespoon of vinegar. As I already noted, it is better to take vinegar, apple cider or grape vinegar. I used grape. Dip the onion into the marinade and leave to marinate while we prepare the other ingredients. Drain the marinade before adding the onion to the salad.

For a dietary version of the salad, the onion can be prepared in another way: pour the onion with boiling water, let it stand for 1-2 minutes and drain the water.

3. Lightly fry the walnuts in a dry frying pan to give them a brighter taste.

4. Grind the nuts with a knife or rolling pin.

5. Wash the bell peppers, peel them of seeds and cut them, like the onions, into a quarter into rings.

6. I took the beans ready-made, so I just had to open the canned food, drain the sauce and rinse the beans from the sauce a little with cold boiled water. If you will use dry beans for salad, then it must be prepared in advance: soak in cold water for four hours and boil until tender. And to make the beans cook faster: when boiling the beans, add 1 tablespoon of cold water to the pan every 7 minutes.

7. Boiled beef in crumbled cubes. I overcooked the meat a little, so the perfect cubes did not work out.

8. Rinse cilantro well, dry and crumble.

9. If you use red hot peppers in a salad, then it should be cleaned of seeds and finely chopped.

10. Prepare the sauce-dressing for the Tbilisi salad: mix the olive oil (3-4 tablespoons), a tablespoon of grape (apple, wine) vinegar, squeeze out the garlic with a press, put the suneli hops and salt.

10. In a deep bowl, mix all the ingredients: beans, meat, peppers, nuts, herbs, onions and season with sauce.
