How to make puff pastry:

  1. Sift the flour into a deep bowl. Pour in about 2.5 cups so you have half a cup more for later.
  2. Add a few drops of vinegar, sugar, salt. Break 2 eggs into the dough.
  3. Pour water into the dough. Knead the dough first with a spoon, and then with your hands, so that you get a homogeneous mass.

  • Eggs should be at room temperature. Beat them into the dough one at a time, stirring long and hard: the mass should become completely homogeneous. You can do it manually or use a mixer.
