Spices with a pronounced taste and aroma are not used. Minced meat is usually seasoned with ground pepper and must be salted. Do not add a lot of salt, as the gravy and sauces in which the hedgehogs are prepared are added separately.

Sauces and gravies for hedgehogs are versatile. In a single dressing, you can prepare a dish from different varieties meat. They can be based on water or broth. Sour cream, cream, tomato give a special taste to such dressings, and they use both tomato paste and fresh, even slightly overripe tomatoes. For consistency, flour is added to the dressings.

Sauces and gravies, like minced meat, are seasoned with ground pepper. They are often supplemented with dried or fresh herbs. Since hedgehogs are not pre-fried like meatballs, the dressings should be added carefully. A stream of liquid is directed into the gaps between the balls so as not to violate their integrity.

As a side dish for minced hedgehogs are suitable pasta, porridge or mashed potatoes... They are also served on their own, with fresh vegetables.

Minced hedgehogs with rice in the oven in tomato sauce

A pound of non-fast minced meat;

Half a glass of round grain rice;

Two large onion heads;

Three fresh tomatoes;

A spoonful of flour;

Small size carrot;

Dried and chopped dill.

1. Boil the sorted rice until half cooked. We rinse under running water and put in a colander so that all excess moisture comes off.

2. Transfer the dried rice to a suitable bowl, add the minced meat and a raw egg... Rub one onion here through a fine grater. If the minced meat was cooked on its own, it is better to twist the onion in a meat grinder after the meat. Season the meat mass with ground pepper, add a little salt and mix everything well.

3. Roll up small balls of minced meat with moistened hands and put them in a wide container with high sides. Ideally, lay them in one row, but if there is no suitable capacity, it is possible and in two "floors".

4. Pour a little more than a spoonful of oil into a deep frying pan and heat it well over low heat. Finely chop the remaining onion, put the slices in a pan and heat until transparent. Add coarse carrot shavings and continue to cook, stirring occasionally.

5. Remove the peel from the tomatoes, grate the pulp. You can puree the tomatoes with a blender. Pour tomato puree for vegetable frying, as soon as the vegetables in the pan are colored in amber... Simmer for two minutes and pour in flour diluted with 50 ml of water. Stirring, add a thin stream to three glasses of boiling water, bring the gravy to a boil.

6. Remove from the stove, adjust the taste by adding sugar and salt. We introduce dried dill and pour into a container for hedgehogs, covered with foil, place in the oven for 40 minutes. We cook for at least half an hour.

Minced meat hedgehogs with rice in the oven with creamy sauce

A kilogram of minced meat mixed with pork and beef;

Four large onions;

A glass of rice;

The egg is fresh;

Three medium carrots;

60 gr. natural sweet butter;

Half a glass of heavy cream;

Three spoons of good flour;

Five glasses of water or meat and bone broth;

Dense tomato - 150 gr.

1. We sort out the rice, pour it into a colander with fine holes or a sieve, scald with boiling water. When all the water is gone, transfer to a deep bowl. After cooling, add the minced meat and pour in the egg here.

2. Finely chop two onions, transfer to a bowl with minced meat. Season with ground pepper, lightly add salt and mix well. If the density allows, for juiciness, you can add up to 100 ml of water.

3. Form small hedgehogs (balls) and put them in one layer in a deep baking sheet.

4. Smallly chop the remaining onions. Put in a frying pan and fry until transparent in butter. Add coarsely grated carrots, saute vegetables until softened.

5. Lightly add fry and press three garlic cloves into it through a press. We introduce the tomato, stirring continuously, add flour. We heat the roast for two minutes, and add broth or water to it. Be sure to stir so that the flour disperses well, and leave for 15 minutes, setting the minimum heating. At the end, add the cream, add salt if necessary, season with pepper.

6. Pour the meat balls with the prepared sauce, cover the baking sheet food foil and set it in the middle level of the preheated oven. We set aside 40 minutes for cooking.

Minced fish hedgehogs with rice in the oven with cheese

Minced fish, preferably cod - 400 gr.;

Half a cup of large rice;

50 gr. white, slightly stale bread;

Seven large fresh tomatoes;

A spoonful of refined oil;

Large onion head;

Cheese - 200 gr.;

Milk - half a glass;

Dill greens;

Bay leaf;

Garlic optional.

1. Wash the tomatoes, after peeling them off, cut into small cubes. The peel is easier to remove if the tomatoes are scalded with boiling water or kept in hot water for at least two minutes.

2. Place a deep frying pan on low heat. Warm a little oil well and put chopped garlic in it. After frying for about 30 seconds, add the tomatoes. Simmer the tomatoes for 10 minutes, covering tightly with a lid, not forgetting to stir occasionally.

3. Cut off the crust from the bread, soak the crumb in milk. After standing for 10 minutes, squeeze the bread with your hands and transfer it to the minced fish. Add onion chopped on a grater, cooked rice until half cooked, break the egg. Season with pepper and lightly salt, mix thoroughly.

4. On a medium grater, rub a part of the cooked cheese (150 gr.). We connect it with minced fish, we form small balls.

5. On the bottom of a large refractory mold with high sides, apply a thin layer butter... We spread fish balls in one row and fill them with cooked tomato sauce.

6. Place the form in hot oven, and cook the hedgehogs in the sauce for 35 minutes, keeping the heat at 180 degrees. Sprinkle generously with cheese shavings and bring to readiness, putting in the oven for 10 minutes.

A simple recipe for minced chicken hedgehogs with rice in the oven

Medium fat minced chicken- 450 gr.;

One large onion;

75 gr. rare 20% sour cream;

A raw egg;

Small carrot;

Creamy, 72% butter - 30 gr.;

One and a half glasses of water;

A spoonful of flour;

50 ml of refined oil;

Long grain rice - half a cup.

1. Lightly weld rice. We throw it back in a colander and, after rinsing well, leave it to dry.

2. Chop the onion, three carrots on a coarse grater. Put vegetables in a frying pan and sauté with butter until golden brown. Roasting should not dry out, so it is advisable to cover the pan with a lid and stir the vegetables occasionally. Cool the finished frying well and, together with the rice, transfer to the minced meat.

3. Sprinkle with a quarter of a spoonful of ground pepper. Stir thoroughly, add a raw egg and a little salt.

4. Wet hands and form balls of the same size from meat mass. We put them in a deep refractory dish (form) greased with vegetable oil.

5. Dilute sour cream in a small bowl cold water, add flour and stir well with a whisk - there should be no lumps. Add to your taste sour cream filling, add pepper if desired.

6. Gently pour the meat balls with sour cream sauce from a spoon, and pour the rest into a mold and place the hedgehogs in a hot oven. We cook for at least 35 minutes, setting the heating to 200 degrees.

Minced meat hedgehogs with rice in the oven with cabbage

Meat homemade minced meat- 500 gr.;

200 gr. fresh white cabbage;

Two large onion heads;

120 g long grain rice;

Sour cream, fat content from 20% - 3 tablespoons;

One raw egg

50 gr. flour;

Two tablespoons of butter;

Finely chopped dill is a small handful.

1. First, boil the rice. We sort out the cereals, pour it into a bowl and, adding butter, fill it with water. Liquids should be taken at the rate of 1: 4. add a little salt and wait for it to boil. At this stage, stir periodically, prying it from the bottom with a spoon in order to separate the stuck grains from it. After boiling, reduce heat and cook rice until not fully cooked. We rinse in a colander warm water and let it cool.

2. Fry finely chopped onions in oil until transparent, cool.

3. Shred the cabbage so that you get thin, short stripes. Coarsely chopped cabbage will not have time to steam well and will make it difficult for hedgehogs to form.

4. Put the minced meat in a large bowl. Add cabbage, ground pepper and sautéed onion, salt a little. While stirring, add the dried rice. The mass should turn out to be thick, otherwise the hedgehogs may disintegrate.

5. Moisten hands with water and, separating the minced meat with a spoon in small portions, form the required size balls. We lay them out on a cutting board.

6. Pour two glasses of water or cold meat broth into a deep bowl. Dissolve sour cream in liquid, add flour and, carefully breaking the lumps, stir with a whisk. Add salt, add a pre-shaken egg, chopped greens into the sauce and beat well again.

7. Pour the sauce into a fireproof container and lower the molded hedgehogs into it. Cover with a suitable lid or a sheet of foil and put in the oven for exactly one hour. The dish is being prepared at 200 degrees.

Minced hedgehogs with rice in the oven with thick mushroom sauce

Medium-fat minced meat - 600 gr.;

100 g large whole rice;

Large carrot;

300 gr. fresh medium-sized champignons;

Two and a half tablespoons of frozen cream or butter;

80 gr. flour;

Refined sunflower oil;

Half a liter of broth or water;

2 lettuce onions.

1. Shred the onion in half rings, cut the mushrooms into slices, chop the carrots with a coarse grater.

2. In a frying pan, warm up well no more than a spoonful of vegetable and dip the butter into it. We are waiting for it to melt. First put the carrots and onions in the fat mixture. Fry the vegetables until transparent, put mushrooms on them and simmer in the released juice until it evaporates. At the very end, add a little. We lay out the vegetables fried with mushrooms in an even layer along the bottom of the refractory form.

3. Boil rice in brackish water and transfer to a colander.

4. Pass the finely chopped onion in butter until transparent. Cool and stir in the minced meat together with the rice. Pre-add some salt to the meat and season with pepper. We sculpt small hedgehogs and put them on a vegetable pillow.

5. Pour flour into a dry frying pan and add butter on top. Turn on medium heat and, stirring continuously, heat for five minutes. Without stopping to warm up and stir, add broth (water) in small portions. In the process, add a little salt to the sauce, and when it begins to thicken, remove it from the stove.

6. Pour the sauce for the meat hedgehogs and put in the oven for half an hour, covering the form with a lid or foil.

Minced hedgehogs with rice in the oven - cooking tricks and tips

It is advisable to cook any minced meat for hedgehogs yourself. In chicken, it is better to use breast and fillet cut from the fleshy parts of the carcass. It is recommended to cook meat hedgehogs from mixed minced meat twisted from lean beef and fatty pork. Fish - from sea, not bony fish.

When buying minced meat, it is better to give preference to a chilled semi-finished product. In this case, you can immediately see its density and quality. Purchased minced meat it is worth scrolling before use. It may contain large pieces.

If the recipe requires adding raw onions, it is still advisable to fry most of it - hedgehogs will turn out to be more juicy. For the same purpose, you can put a little loaf crumb soaked in milk into the meat or fish mass. In this case, they will keep their shape even better.
