  1. For the omelet, you need to choose a young, medium-sized zucchini with thin skin and small unripe seeds. The tail of the fruit must be cut off and, without removing the peel and without removing the middle, cut into thin wide ribbons using a vegetable cutter.

Cooking process:

  1. Wash and wipe eggs thoroughly. Split one at a time into a separate bowl for testing.
  2. Combine all the eggs in one bowl, add a pinch of salt and beat with a fork until smooth and light foam for about 1 minute.
  3. Melt butter with a fat content of at least 82.5% in a frying pan over high heat. Reduce heat to low and pour the beaten eggs over the butter. Rotate the pan quickly in a circle so that the omelet is evenly distributed over the bottom of the pan, like a pancake.
  4. Grate the cheese on a fine grater and sprinkle the omelet with it evenly.
  5. If desired, at this stage, you can sprinkle the dish with finely chopped parsley and dill, and add ground black pepper or a pinch of Provencal herbs.
